  • 3 cloves fresh garlic, minced
  • 9 oven-ready lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 2 cups fresh spinach
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown.
  2. Stir in minced garlic for about 30 seconds, then add spinach until wilted.
  3. Pour in the chicken broth and mix with ricotta until smooth; bring to a gentle simmer.
  4. Break lasagna noodles into sections and layer them into the skillet. Top with half of the mozzarella.
  5. Repeat layering with remaining ingredients: noodles, chicken-spinach mixture, and finish with remaining cheeses.
  6. Cover and bake at 375°F (190°C) for 25–30 minutes. Remove cover for the last 10 minutes to brown.
