  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 large fresh lemons (juiced and zested)
  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 4 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley (chopped)
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Trim excess fat from the chicken breasts, rinse under cold water, and pat dry.
  2. In a large pot over medium heat, add olive oil and sauté diced onions, carrots, and celery until softened.
  3. Stir in minced garlic, thyme, and parsley until fragrant.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Add the whole chicken breasts to the pot; reduce heat to low and cover. Simmer for 20-25 minutes until cooked through.
  6. Remove the chicken; shred it and return to the pot along with fresh lemon juice and zest. Stir well before serving.
