  • 2 stalks fresh lemongrass, minced
  • 4 cloves garlic, minced
  • 2 shallots, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Marinade: In a bowl, mix minced lemongrass, garlic, shallots, soy sauce, fish sauce, brown sugar, and lime juice until well combined.
  2. Marinate the Chicken: Place chicken thighs in a resealable bag, pour the marinade over them, seal tightly, and refrigerate for at least 30 minutes or overnight.
  3. Heat Your Pan: In a large skillet over medium-high heat, add a splash of oil until shimmering.
  4. Sear the Chicken: Remove chicken from marinade (reserve the marinade) and cook in the hot skillet for 5-6 minutes on each side until golden brown and cooked through.
  5. Add Remaining Marinade: Pour reserved marinade into the skillet with chicken and simmer for an additional 3-4 minutes until thickened slightly.
  6. Serve Hot: Transfer chicken to a serving plate, garnish with cilantro, and serve with jasmine rice or fresh veggies.
