  • 2 lbs beef chuck roast, diced
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red and green), chopped
  • 2 medium carrots, sliced
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 2 tbsp smoked paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp canola oil

Instructions

  1. Heat canola oil in a large pot over medium-high heat. Sear diced beef in batches until browned on all sides (about 5 minutes).
  2. Remove the beef and sauté onions and garlic until translucent (3-4 minutes).
  3. Add bell peppers and carrots; cook for about 5 minutes.
  4. Stir in tomato paste, smoked paprika, thyme, bay leaves, salt, and pepper; cook for another minute.
  5. Gradually add beef broth, scraping up any brown bits from the pot.
  6. Return the seared beef to the pot, cover partially, and simmer on low heat for 1.5 to 2 hours until tender.
