- 2 tbsp smoked paprika
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste

- Heat canola oil in a large pot over medium-high heat. Sear diced beef in batches until browned on all sides (about 5 minutes).
- Remove the beef and sauté onions and garlic until translucent (3-4 minutes).
- Add bell peppers and carrots; cook for about 5 minutes.
- Stir in tomato paste, smoked paprika, thyme, bay leaves, salt, and pepper; cook for another minute.
- Gradually add beef broth, scraping up any brown bits from the pot.
- Return the seared beef to the pot, cover partially, and simmer on low heat for 1.5 to 2 hours until tender.
