  • 1 cup fresh spinach, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup heavy cream (or substitute with half-and-half)
  • 1 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 1 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix ground turkey, panko breadcrumbs, minced garlic, Parmesan cheese, and Italian seasoning until well combined.
  2. Roll the mixture into golf-ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sauté meatballs until golden brown on all sides (about 10 minutes).
  4. Remove meatballs and set aside. In the same skillet, sauté fresh spinach until wilted.
  5. Pour in chicken broth and heavy cream, stirring continuously until smooth.
  6. Return meatballs to the skillet and let them simmer for about 10 minutes to absorb flavors.
