  • 8 oz wide pasta
  • 2 large sweet yellow onions, sliced
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream
  • ½ cup grated fresh Parmesan cheese
  • 3 sprigs fresh thyme
  • Salt & pepper to taste

Instructions

  1. In a large skillet over medium heat, melt butter. Add sliced onions and cook slowly until deep golden brown (about 20 minutes).
  2. Stir in minced garlic and sauté for 1 minute. Pour in beef broth and simmer gently for another 5 minutes.
  3. Reduce heat; stir in heavy cream until well combined. Season with salt and pepper.
  4. Meanwhile, boil water and cook pasta according to package instructions until al dente. Drain, reserving some pasta water.
  5. Combine drained pasta with the creamy sauce and Parmesan cheese in the skillet. Adjust consistency with reserved pasta water as needed.
