Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup unsulfured molasses
  • 2 tsp active dry yeast
  • 1 cup warm water (110°F/43°C)
  • 4 tbsp unsalted butter (melted)
  • 1/4 cup honey
  • 1 tsp salt
  • 1 cup whole milk (warm)

Instructions

  1. Activate yeast: Combine warm water and yeast in a small bowl; let sit for 5-10 minutes until bubbly.
  2. Mix dry ingredients: In a large bowl, whisk together flour, oats, and salt.
  3. Combine wet ingredients: In another bowl, mix melted butter, molasses, honey, milk, and activated yeast; whisk until smooth.
  4. Bring it all together: Gradually pour wet mixture into dry ingredients; stir until combined into a shaggy dough.
  5. Knead: Turn out dough onto a floured surface; knead for 8-10 minutes until elastic but slightly sticky.
  6. First rise: Place dough in an oiled bowl covered with plastic wrap; let rise until doubled in size (about 1 hour).
  7. Shape rolls: Punch down dough; divide into equal pieces and shape into balls; place on baking sheets.
  8. Second rise: Cover rolls with a towel; let rise again until puffy (30-45 minutes).
  9. Bake: Preheat oven to 375°F (190°C) and bake rolls for 15-20 minutes until golden brown.
