- 1 lb Andouille sausage, sliced
- 1 lb raw shrimp, peeled and deveined
- 1 cup long-grain rice
- 1 cup diced tomatoes (canned)
- 2 cups low-sodium chicken broth
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp Cajun seasoning (paprika, cayenne pepper, thyme, oregano)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced Andouille sausage and brown for about 5 minutes.
- Stir in chopped onion, bell peppers, and minced garlic; sauté until softened.
- Add rice to the pot; stir until coated with oil. Pour in diced tomatoes and chicken broth; mix well.
- Season with Cajun spices. Bring to a boil, then reduce heat to low. Cover tightly and simmer for 20-25 minutes until rice is tender.
- In the last few minutes of cooking, place shrimp on top without stirring. Cover until shrimp turn pink (5-7 minutes).
- Fluff jambalaya with a fork before serving and garnish with fresh parsley or green onions.
