- 2 medium yellow onions, diced
- 4 cloves garlic, minced
- 2 large carrots, cut into thick rounds
- 1 cup red wine (Cabernet Sauvignon recommended)
- 2 cups beef broth (low-sodium)
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 tbsp olive oil
Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef short ribs with salt and pepper. In a large pot over medium-high heat, add olive oil and sear the ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
- In the same pot, add onions and sauté until translucent. Add garlic and carrots; cook until fragrant.
- Deglaze the pot with red wine, scraping up any browned bits from the bottom.
- Return the short ribs to the pot, pour in beef broth until just covered, and add thyme and bay leaves. Bring to a simmer.
- Cover the pot and transfer it to the oven. Braise for 2-3 hours until the meat is fork-tender and falling off the bone.
- Let rest for 10 minutes before serving. Spoon sauce over ribs and serve with crusty bread.
