  • 3 lbs beef short ribs
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 2 large carrots, cut into thick rounds
  • 1 cup red wine (Cabernet Sauvignon recommended)
  • 2 cups beef broth (low-sodium)
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef short ribs with salt and pepper. In a large pot over medium-high heat, add olive oil and sear the ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, add onions and sauté until translucent. Add garlic and carrots; cook until fragrant.
  4. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
  5. Return the short ribs to the pot, pour in beef broth until just covered, and add thyme and bay leaves. Bring to a simmer.
  6. Cover the pot and transfer it to the oven. Braise for 2-3 hours until the meat is fork-tender and falling off the bone.
  7. Let rest for 10 minutes before serving. Spoon sauce over ribs and serve with crusty bread.
