  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup creamy or chunky peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cups vegetable broth
  • 2 cups fresh vegetables (bell peppers and carrots), chopped
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Chop the vegetables into bite-sized pieces.
  2. In a skillet over medium heat, sauté minced garlic in oil until fragrant (about 1 minute).
  3. Place chicken breasts at the bottom of the crockpot; layer on the veggies followed by coconut milk, peanut butter, soy sauce, and broth.
  4. Mix gently until combined; cover and cook on low for 6-8 hours or high for about 3-4 hours.
  5. Shred chicken in the pot using two forks; stir in lime juice before serving.
  6. Garnish with chopped cilantro.
