  • 1 cup rinsed quinoa
  • 2 cups water or broth
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • ½ medium cucumber, diced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey or agave syrup

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa and water (or broth) and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed. Let cool.
  2. Whisk together olive oil, lemon juice, and honey in a small bowl.
  3. In a large bowl, combine cooled quinoa, mixed berries, diced cucumber, crumbled feta cheese, and mint leaves. Gently toss to combine.
  4. Drizzle dressing over the salad just before serving and toss gently to coat.
