Ingredients

  • 6 oz ladyfingers (about 24 cookies)
  • 8 oz mascarpone cheese
  • 1 cup espresso coffee, brewed and cooled
  • 2 tbsp coffee liqueur (optional)
  • 2 tbsp unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 3 large eggs, separated

Instructions

  1. Brew espresso and let it cool. Mix in coffee liqueur if desired.
  2. In a bowl, whisk egg yolks and sugar until pale and fluffy.
  3. Fold in mascarpone cheese gently until smooth.
  4. In another bowl, whip egg whites to stiff peaks, then fold into the mascarpone mixture.
  5. Dip ladyfingers briefly into the coffee mixture and layer them in a dish.
  6. Spread half of the mascarpone filling over the ladyfingers; repeat layers.
  7. Chill for at least 4 hours, dust with cocoa before serving.
