  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 tbsp smoked paprika
  • 1 (28 oz) can crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 large carrots, sliced into rounds
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef until browned on all sides.
  2. Add onions and garlic; sauté until onions are translucent.
  3. Stir in smoked paprika, salt, pepper, and bay leaves. Add crushed tomatoes with juices.
  4. Pour in beef broth and bring to a gentle boil. Reduce heat and simmer uncovered for 1.5 hours.
  5. Stir in carrots during the last 30 minutes of cooking.
  6. Adjust seasoning if necessary before serving hot over noodles or with bread.
