  • 2 medium waxy potatoes, diced (approx. 2 cups)
  • 4 cups low-sodium beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat and transfer to the crockpot.
  2. Sauté onions, carrots, and celery in the same skillet until softened; add to the crockpot.
  3. Add diced potatoes and beef broth to the crockpot; stir gently to combine.
  4. Season with salt, pepper, garlic powder, smoked paprika, and Dijon mustard; mix well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in heavy cream and cheddar cheese until melted.
