  • 4 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, finely chopped
  • 2 tsp poultry seasoning
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup whole milk
  • 4 tbsp butter, melted

Instructions

  1. Prepare your ingredients by dicing the onion, slicing the carrots, and chopping the celery.
  2. (Optional) Brown the chicken breasts in a skillet over medium heat until golden for added flavor.
  3. In your crockpot, layer the chopped vegetables and then add the chicken breasts. Pour in chicken broth and sprinkle poultry seasoning on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, combine flour, baking powder, milk, and melted butter in a bowl until just mixed (lumps are okay).
  6. Drop spoonfuls of dumpling dough into the simmering mixture and cook on high for an additional 30 minutes until fluffy.
