  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 medium carrots (finely chopped)
  • 2 celery stalks (chopped)
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Dice the onions, chop the carrots and celery, and mince the garlic.
  2. Place chicken breasts at the bottom of the crockpot. Layer with diced onions, carrots, celery, and minced garlic.
  3. Pour the chicken broth over the ingredients until covered. Sprinkle with thyme, parsley, salt, pepper, and lemon juice.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours without peeking.
  5. About 30 minutes before serving, add rinsed rice to the pot and stir gently.
  6. Shred cooked chicken in the pot before serving to mix flavors.
