  • 2 large sweet or yellow onions, sliced
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp balsamic vinegar
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the sliced onions until golden brown. Add minced garlic and cook until fragrant.
  3. While the onions are cooking, pound chicken breasts to an even thickness and season with salt and pepper.
  4. Once onions are caramelized, mix them with mozzarella cheese and fresh thyme in a bowl. Stuff each chicken breast with this mixture and secure with toothpicks if necessary.
  5. Place stuffed chicken in a baking dish, drizzle balsamic vinegar over them, and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
