  • 4 cups low-sodium vegetable broth
  • 1 cup carrots, thinly sliced
  • 1 medium zucchini, cut into half-moons
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent (about 3-4 minutes).
  2. Stir in sliced carrots and zucchini; cook for another 5 minutes until slightly softened.
  3. Pour in vegetable broth and add Italian seasoning; bring to a gentle boil.
  4. Add ravioli to the boiling broth and cook according to package instructions (usually 4-6 minutes).
  5. Just before serving, stir in fresh spinach until wilted. Top each bowl with grated Parmesan cheese.
