  • 1.5 lbs boneless skinless chicken thighs
  • 1 (4 oz) can mild or hot canned green chiles
  • 4 cups low-sodium chicken broth
  • 2 cups hominy, drained and rinsed
  • 1 cup chopped fresh cilantro
  • 2 tbsp freshly squeezed lime juice
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat a splash of oil in a skillet over medium heat. Sauté diced onions and minced garlic until golden brown.
  2. Transfer the sautéed mixture into the crockpot. Add boneless chicken thighs and season with salt and pepper.
  3. Pour enough chicken broth to cover the chicken completely, then stir in canned green chiles.
  4. Add drained hominy along with cumin and oregano. Mix well to combine.
  5. Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken inside the pot using two forks. Stir in fresh lime juice and chopped cilantro before serving.
