- 1.5 lbs boneless skinless chicken thighs
- 1 (4 oz) can mild or hot canned green chiles
- 4 cups low-sodium chicken broth
- 2 cups hominy, drained and rinsed
- 1 cup chopped fresh cilantro
- 2 tbsp freshly squeezed lime juice
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 medium onion, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat a splash of oil in a skillet over medium heat. Sauté diced onions and minced garlic until golden brown.
- Transfer the sautéed mixture into the crockpot. Add boneless chicken thighs and season with salt and pepper.
- Pour enough chicken broth to cover the chicken completely, then stir in canned green chiles.
- Add drained hominy along with cumin and oregano. Mix well to combine.
- Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken inside the pot using two forks. Stir in fresh lime juice and chopped cilantro before serving.
