- 3–4 boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded sharp cheddar cheese
- 1/2 cup mayonnaise
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp low-sodium soy sauce
- 2 tbsp fresh lemon juice
Instructions
- Preheat the oven to 350°F (175°C). Chop broccoli into bite-sized pieces.
- In a skillet over medium heat, cook seasoned chicken breasts until golden brown (about 6-7 minutes per side). Let cool before cutting into bite-sized pieces.
- In a bowl, mix cream of mushroom soup, mayonnaise, soy sauce, lemon juice, garlic powder, salt, and pepper until smooth.
- Gently fold in chopped broccoli and diced chicken until well coated.
- Transfer mixture to a greased 9×13 inch baking dish. Spread evenly and top with shredded cheddar cheese.
