  • 1 lb ground Italian sausage
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 6 oz uncooked lasagna sheets, broken into pieces
  • 2 cups fresh spinach or kale
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic; sauté for about 5 minutes until softened.
  2. Crumble ground sausage into the pot and cook until browned (about 8 minutes).
  3. Pour in chicken broth while scraping up any brown bits from the bottom of the pot. Bring to a gentle simmer.
  4. Stir in softened cream cheese until melted and combined.
  5. Add broken lasagna sheets to the soup and cook for about 10 minutes until tender yet firm.
  6. Mix in spinach or kale along with mozzarella and Parmesan cheeses until melted and combined.
