  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, rinsed
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil (for cooking)
  • 1 cup sour cream
  • 1 cup salsa

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil over medium heat and cook seasoned chicken until golden brown and cooked through.
  2. Shred the cooked chicken using two forks and combine it in a bowl with black beans, both cheeses, cumin, chili powder, salt, and pepper.
