  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 medium flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup vegetable oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C). In a pot, bring water to a boil and add chicken. Simmer until cooked through (15-20 minutes).
  2. Shred the cooked chicken using two forks.
  3. In a bowl, mix shredded chicken with garlic, cumin, chili powder, salt, and pepper.
  4. Heat tortillas in a skillet for about 30 seconds per side until soft.
  5. Fill each tortilla with the chicken mixture and cheese, then roll tightly.
  6. Heat oil in a skillet over medium-high heat. Fry taquitos seam-side down for 3-4 minutes or until golden brown.
