Ingredients

  • 2 cups fresh cucumbers, sliced
  • 1 cup carrots, sliced into sticks
  • 1 cup red radishes, halved
  • 1 cup water
  • 1 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 3 tbsp granulated sugar
  • 2 tsp kosher salt
  • 1 tsp mustard seeds
  • 1 tsp peppercorns

Instructions

  1. Wash and slice cucumbers, carrots, and radishes.
  2. In a saucepan, combine water, white vinegar, apple cider vinegar, sugar, and salt. Heat until dissolved; bring to a simmer and remove from heat.
  3. Place mustard seeds and peppercorns in clean jars.
  4. Pack sliced vegetables tightly into jars.
  5. Pour cooled brine over vegetables until submerged; leave half an inch of space at the top.
  6. Seal jars and refrigerate for at least 24 hours before enjoying.
