- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 tsp garlic powder
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 2–3 tbsp Sriracha sauce (to taste)
- 2 cups mixed vegetables (bell peppers, broccoli, etc.)
- 2 cups cooked rice or quinoa
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, and garlic powder.
- In one bowl, mix flour with salt and pepper. In another bowl, combine panko breadcrumbs with garlic powder.
- Coat each piece of chicken in the flour mixture, then dip in egg wash, and roll in panko crumbs.
- Heat oil in a large skillet over medium heat. Fry the chicken until golden brown and crispy (6-8 minutes per side).
- While frying, mix soy sauce, honey, and Sriracha in a small bowl; adjust to taste.
- Once cooked, toss the chicken in the sauce until evenly coated. Serve over rice or quinoa with veggies.
