  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 23 tbsp Sriracha sauce (to taste)
  • 2 cups mixed vegetables (bell peppers, broccoli, etc.)
  • 2 cups cooked rice or quinoa

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, and garlic powder.
  2. In one bowl, mix flour with salt and pepper. In another bowl, combine panko breadcrumbs with garlic powder.
  3. Coat each piece of chicken in the flour mixture, then dip in egg wash, and roll in panko crumbs.
  4. Heat oil in a large skillet over medium heat. Fry the chicken until golden brown and crispy (6-8 minutes per side).
  5. While frying, mix soy sauce, honey, and Sriracha in a small bowl; adjust to taste.
  6. Once cooked, toss the chicken in the sauce until evenly coated. Serve over rice or quinoa with veggies.
