  • 1 cup shredded Monterey Jack cheese

  • 1 tsp smoked paprika
  • 2 tbsp butter or oil for frying

Instructions

  4. Place a tortilla on a flat surface, spread half with the potato mixture, fold it over into a half-moon shape.
  5. In the skillet, heat butter or oil over medium heat; cook each quesadilla until golden brown and crispy on both sides (3-4 minutes per side).
  6. Cut into wedges and serve warm with salsa or guacamole.
