  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and dicing the sweet potatoes, chopping the onion and bell peppers.
  2. In a large pot, heat olive oil over medium heat. Sauté onion and bell peppers until soft (about 5 minutes).
  3. Add ground turkey to the pot; cook until browned (about 8 minutes).
  4. Stir in garlic, chili powder, and cumin; cook briefly to enhance flavors.
