Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (red and yellow)
  • ½ cup red onion, thinly sliced
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ cup fresh cilantro, chopped
  • ¼ cup lime juice (fresh)
  • ¼ cup olive oil (extra virgin)
  • ½ tsp cumin powder
  • Salt & pepper to taste

Instructions

  1. Cook rotini pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Chop cherry tomatoes, bell peppers, and red onion into bite-sized pieces. Rinse black beans well.
  3. In a small bowl, whisk together olive oil, lime juice, cumin powder, salt, and pepper until well mixed.
  4. In a large mixing bowl, combine cooled pasta with vegetables and black beans. Pour dressing over the top and toss gently.
  5. Fold in chopped cilantro carefully. Serve immediately or refrigerate for 30 minutes to enhance flavors.
