- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced (red and yellow)

- 1 can (15 oz) black beans, rinsed and drained
- ½ cup fresh cilantro, chopped
- ¼ cup lime juice (fresh)
- ¼ cup olive oil (extra virgin)
- ½ tsp cumin powder
- Salt & pepper to taste
Instructions
- Cook rotini pasta in salted boiling water until al dente; drain and rinse under cold water.
- Chop cherry tomatoes, bell peppers, and red onion into bite-sized pieces. Rinse black beans well.
- In a small bowl, whisk together olive oil, lime juice, cumin powder, salt, and pepper until well mixed.
- In a large mixing bowl, combine cooled pasta with vegetables and black beans. Pour dressing over the top and toss gently.
