  • 4 cups fresh spinach leaves
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 1 cup ripe strawberries, hulled and quartered
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts or pecans, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Rinse spinach thoroughly and pat dry.
  2. Preheat oven to 400°F (200°C). Toss asparagus with olive oil and roast on a baking sheet for about 15 minutes until tender.
  3. While asparagus roasts, slice strawberries into quarters.
  4. In a large bowl, combine spinach, roasted asparagus (cooled), sliced strawberries, feta cheese, and nuts. Toss gently.
  5. For the dressing, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper; drizzle over the salad before serving.
  6. Toss again to coat evenly and serve immediately.
