  • 1 cup dried cannellini beans (soaked overnight)
  • 4 cups low-sodium vegetable broth
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 medium carrots (diced)
  • 2 stalks celery (chopped)
  • 2 tsp fresh thyme
  • 1 bay leaf
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse soaked beans and place in a large pot. Cover with fresh water by two inches and bring to a boil over medium heat.
  2. In a separate pan, heat olive oil over medium heat. Sauté chopped onions, carrots, and celery until onions are translucent.
  3. Add minced garlic, thyme, and bay leaf; sauté for another minute until fragrant.
  4. Pour the sautéed mixture into the pot with beans and add vegetable broth. Bring to a gentle simmer.
  5. Reduce heat to low and simmer for about 45 minutes, or until beans are tender, adding more broth if necessary.
  6. Stir in lemon juice and adjust seasoning with salt and pepper before serving hot.
