- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 cups white beans (canned or soaked dried)
- 1 can (4 oz) diced green chilies
- 1 cup chopped cilantro
- 4 cups low-sodium chicken broth
- 2 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- Juice of 1 lime
Instructions
- Chop the chicken into bite-sized pieces. Mince the garlic and set aside spices.
- In a large pot over medium heat, drizzle olive oil and sauté garlic until fragrant (about 30 seconds).
- Add chicken, cumin, and oregano; cook until chicken is no longer pink (5–7 minutes).
- Stir in white beans and green chilies; pour in chicken broth.
- Bring to a gentle boil then reduce heat and simmer uncovered for 30 minutes.
- Just before serving, stir in lime juice and chopped cilantro for freshness.
