  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups white beans (canned or soaked dried)
  • 1 can (4 oz) diced green chilies
  • 1 cup chopped cilantro
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • Juice of 1 lime

Instructions

  1. Chop the chicken into bite-sized pieces. Mince the garlic and set aside spices.
  2. In a large pot over medium heat, drizzle olive oil and sauté garlic until fragrant (about 30 seconds).
  3. Add chicken, cumin, and oregano; cook until chicken is no longer pink (5–7 minutes).
  4. Stir in white beans and green chilies; pour in chicken broth.
  5. Bring to a gentle boil then reduce heat and simmer uncovered for 30 minutes.
  6. Just before serving, stir in lime juice and chopped cilantro for freshness.
