  • 8 oz rotini pasta
  • 4 slices thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/4 cup red onion, thinly sliced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and cool under cold water.
  2. In a skillet over medium heat, fry the chopped bacon until crispy, then drain on paper towels.
  3. Dice the cherry tomatoes and chop the romaine lettuce while the pasta cools.
