Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp ground cumin
  • 2 tsp chili powder (adjust for spice preference)
  • Salt and pepper to taste
  • 2 cups cooked rice or 4 cups crisp lettuce (for serving)
  • Optional toppings: avocado, cheese, salsa, sour cream

Instructions

  1. Prepare your ingredients by washing and slicing the vegetables.
  2. In a mixing bowl, combine olive oil, cumin, chili powder, salt, and pepper. Coat the chicken with the marinade and let it sit for at least 15 minutes.
  3. Heat a skillet over medium-high heat; add olive oil. Cook the seasoned chicken for about 5-7 minutes per side until golden brown and reaches an internal temperature of 165°F. Remove from skillet and cover to keep warm.
  4. In the same skillet, sauté the sliced peppers and onion for about 5 minutes until softened.
  5. Let the chicken rest briefly before slicing into bite-sized pieces.
  6. Assemble your bowls starting with rice or lettuce as the base; top with sautéed veggies and sliced chicken. Add optional toppings as desired.
