  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium sweet onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • 1 (14.5 oz) can diced tomatoes (fire-roasted preferred)
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese
  • Sour cream or Greek yogurt for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat olive oil. Add diced chicken and cook until browned and no longer pink.
  3. Add sliced bell peppers and onions to the skillet; sauté for about 5-7 minutes until softened.
  4. Stir in fajita seasoning and canned diced tomatoes. Mix well to combine all ingredients.
  5. In a greased baking dish, layer half of the crushed tortilla chips, followed by half the chicken mixture and half the shredded cheese. Repeat layers.
  6. Bake for 20-25 minutes until bubbly and golden brown on top.
  7. Let cool slightly before serving with a dollop of sour cream or Greek yogurt.
