  • 34 boneless, skinless chicken breasts (diced)
  • 2 cups mixed bell peppers (sliced)
  • 1 medium yellow onion (sliced)
  • 3 cloves fresh garlic (minced)
  • 2 tbsp fajita seasoning
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup crushed tortilla chips
  • Optional: sour cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook diced chicken until browned and cooked through (7-10 minutes).
  3. Add sliced bell peppers and onions; cook until softened (about 5 minutes).
  4. Stir in fajita seasoning and minced garlic; mix well.
  5. Add the drained diced tomatoes and combine thoroughly.
  6. In a greased baking dish, layer half of the crushed tortilla chips, followed by the chicken mixture and half of the cheese. Repeat layers finishing with cheese on top.
  7. Bake for 20-25 minutes until bubbly and golden brown.
