- 3 tbsp mayonnaise
- 1 tbsp curry powder
- 1 tsp Dijon mustard

Instructions
- Hard-boil the eggs by placing them in a saucepan, covering with cold water, and bringing to a boil. Remove from heat, cover, and let sit for 12 minutes. Drain and cool in ice water.
- Once cooled, peel the eggs under running water. Slice each egg in half lengthwise and scoop out the yolks into a mixing bowl.
- Add mayonnaise, curry powder, Dijon mustard, salt, pepper, and chopped green onions to the yolks. Mix until creamy and smooth.
- Fill each egg white half generously with the yolk mixture using a spoon or piping bag.
- Garnish with smoked paprika and additional green onions if desired. Serve chilled.
