Instructions
- 1. Prepare the Marinade: In a bowl, combine minced lemongrass, garlic, ginger, soy sauce, brown sugar, vegetable oil, and optional chili. Mix well.
- 2. Marinate the Chicken: Place chicken thighs in a zip-top bag or bowl. Pour marinade over chicken and ensure all pieces are evenly coated. Refrigerate for at least 30 minutes or up to overnight.
- 3. Preheat the Grill: Preheat grill to medium-high heat (375°F/190°C) and lightly oil the grates.
- 4. Grill the Chicken: Cook marinated chicken on the grill for about 6-8 minutes per side until internal temperature reaches 165°F (75°C).
