  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 fresh lemongrass stalks, finely chopped
  • 4 garlic cloves, minced
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 tbsp vegetable oil (or grapeseed oil)
  • Juice of 1 lime
  • Fresh cilantro leaves for garnish

Instructions

  1. In a bowl, combine chopped lemongrass, minced garlic, fish sauce, brown sugar, vegetable oil, and lime juice. Mix well to create a fragrant marinade.
  2. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. Preheat grill to medium-high heat (400°F/200°C).
  4. Remove chicken from marinade and shake off excess. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C), creating nice grill marks.
  5. Let the chicken rest for about 5 minutes before slicing and garnish with cilantro.
