- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 fresh lemongrass stalks, finely chopped
- 4 garlic cloves, minced
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tbsp vegetable oil (or grapeseed oil)
- Juice of 1 lime
- Fresh cilantro leaves for garnish
Instructions
- In a bowl, combine chopped lemongrass, minced garlic, fish sauce, brown sugar, vegetable oil, and lime juice. Mix well to create a fragrant marinade.
- Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
- Preheat grill to medium-high heat (400°F/200°C).
- Remove chicken from marinade and shake off excess. Grill for about 6-7 minutes per side until internal temperature reaches 165°F (75°C), creating nice grill marks.
