Ingredients

  • 1 cup quinoa
  • 2 medium sweet potatoes, diced
  • 1 cup Brussels sprouts, thinly sliced
  • 2 cups kale, chopped
  • ½ cup pecans, toasted
  • ½ cup dried cranberries
  • 2 tbsp pure maple syrup
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions (about 15 minutes).
  2. Preheat oven to 425°F (220°C). Toss sweet potatoes and Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast veggies for 25-30 minutes until tender.
  4. Massage kale with olive oil until softened.
  5. In a small bowl, whisk together lemon juice and maple syrup.
  6. Assemble bowls by layering quinoa, roasted veggies, kale, pecans, and cranberries.
  7. Drizzle with the dressing before serving.
