  • 2 medium carrots, sliced thinly
  • 1 medium zucchini, diced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup ditalini pasta
  • ½ cup pesto (store-bought or homemade)
  • 2 cups fresh spinach or kale
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent (about 5 minutes).
  2. Add crumbled Italian sausage and minced garlic; cook until browned.
  3. Stir in sliced carrots and zucchini, then add canned tomatoes with juices. Simmer for about 10 minutes.
  4. Pour in vegetable broth and add ditalini pasta. Bring to a boil, then reduce heat to simmer until pasta is al dente (approximately 8 minutes).
  5. Mix in fresh spinach or kale along with pesto; cook until greens are wilted (2–3 minutes).
  6. Serve hot, topped with freshly grated Parmesan cheese.
