- 1 cup mascarpone cheese

- Optional: splash of rum or flavored liqueur
Instructions
- Brew the espresso and let it cool slightly. Optionally, mix in a splash of rum.
- In a bowl, whisk together the egg yolks and sugar until pale and fluffy (about 5 minutes).
- Gently fold in the mascarpone cheese and vanilla extract until combined.
- In another bowl, whip the egg whites until stiff peaks form.
- Carefully fold the whipped egg whites into the mascarpone mixture in three parts.
- Briefly dip each ladyfinger into the cooled espresso (do not soak), then layer them in a dish.
- Spread half of the mascarpone mixture over the ladyfingers and repeat with another layer of dipped ladyfingers and remaining mascarpone.
- Sift cocoa powder over the top layer, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
