  • 1 cup strong brewed espresso (cooled)
  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 3 large egg yolks
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 2 tablespoons unsweetened cocoa powder
  • Optional: splash of rum or flavored liqueur

Instructions

  1. Brew the espresso and let it cool slightly. Optionally, mix in a splash of rum.
  2. In a bowl, whisk together the egg yolks and sugar until pale and fluffy (about 5 minutes).
  3. Gently fold in the mascarpone cheese and vanilla extract until combined.
  4. In another bowl, whip the egg whites until stiff peaks form.
  5. Carefully fold the whipped egg whites into the mascarpone mixture in three parts.
  6. Briefly dip each ladyfinger into the cooled espresso (do not soak), then layer them in a dish.
  7. Spread half of the mascarpone mixture over the ladyfingers and repeat with another layer of dipped ladyfingers and remaining mascarpone.
  8. Sift cocoa powder over the top layer, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
