  • 2 cups all-purpose flour
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the dough by mixing flour and egg until smooth. Knead until elastic, wrap in plastic wrap, and let rest for 30 minutes.
  2. Make the filling by combining lobster meat, ricotta cheese, herbs, garlic, and Parmesan in a bowl; season with salt and pepper.
  3. Roll out the rested dough on a floured surface to about 1/16-inch thickness using a pasta machine or rolling pin.
  4. Cut dough into circles or squares; place small mounds of filling on one half and fold over to seal tightly.
  5. Boil salted water in a large pot; add ravioli and cook until they float (approximately 3-5 minutes). Drain carefully.
  6. For the sauce, melt butter in a skillet over medium heat, sauté garlic until fragrant, then add heavy cream and lemon zest; simmer until slightly thickened.
