  • 3 lbs beef chuck roast
  • 8 oz cremini mushrooms, sliced
  • 8 oz shiitake mushrooms, sliced
  • 2 medium sweet onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prepare the ingredients by dicing onions, mincing garlic, and slicing mushrooms.
  2. In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper and sear until browned on all sides (about 3-4 minutes per side).
  3. Remove the beef from the pot and sauté onions and mushrooms in the remaining oil until softened (5-7 minutes).
  4. Stir in minced garlic, thyme, and rosemary; cook for an additional minute before adding the beef back to the pot.
  5. Pour in beef broth to cover the meat halfway; scrape up any browned bits from the bottom of the pot. Bring to a gentle boil, then reduce heat to low. Cover tightly and simmer for about 2-3 hours until tender.
  6. Once tender, remove the beef again and stir in heavy cream until well combined over low heat. Slice beef against the grain before serving it atop the creamy mushroom sauce.
