- 3 lbs beef chuck roast
- 8 oz cremini mushrooms, sliced
- 8 oz shiitake mushrooms, sliced
- 2 medium sweet onions, diced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup heavy cream
- 2 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Prepare the ingredients by dicing onions, mincing garlic, and slicing mushrooms.
- In a large pot, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper and sear until browned on all sides (about 3-4 minutes per side).
- Remove the beef from the pot and sauté onions and mushrooms in the remaining oil until softened (5-7 minutes).
- Stir in minced garlic, thyme, and rosemary; cook for an additional minute before adding the beef back to the pot.
- Pour in beef broth to cover the meat halfway; scrape up any browned bits from the bottom of the pot. Bring to a gentle boil, then reduce heat to low. Cover tightly and simmer for about 2-3 hours until tender.
- Once tender, remove the beef again and stir in heavy cream until well combined over low heat. Slice beef against the grain before serving it atop the creamy mushroom sauce.
