- 2 large sweet onions, thinly sliced
- 2 cups Gruyère cheese, shredded
- 1 cup heavy cream
- 3 tbsp unsalted butter
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt the butter. Sauté the onions until golden brown, about 15 minutes.
- Stir in the heavy cream, thyme, salt, and pepper; simmer for 5 minutes.
- In a greased baking dish, layer half of the sliced potatoes, followed by half of the onion mixture and half of the cheese.
- Repeat layers with remaining potatoes and onion mix, finishing with cheese on top.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20 minutes until golden brown. Let cool slightly before serving.
