  • 2 lbs Russet potatoes, peeled and thinly sliced
  • 2 large sweet onions, thinly sliced
  • 2 cups Gruyère cheese, shredded
  • 1 cup heavy cream
  • 3 tbsp unsalted butter
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter. Sauté the onions until golden brown, about 15 minutes.
  3. Stir in the heavy cream, thyme, salt, and pepper; simmer for 5 minutes.
  4. In a greased baking dish, layer half of the sliced potatoes, followed by half of the onion mixture and half of the cheese.
  5. Repeat layers with remaining potatoes and onion mix, finishing with cheese on top.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20 minutes until golden brown. Let cool slightly before serving.
