  • 4 large egg whites (room temperature)
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw an 8-inch circle as a guide.
  2. In a clean bowl, beat room temperature egg whites on medium speed until foamy. Gradually add granulated sugar until soft peaks form.
  3. Add cornstarch and vinegar; whisk until glossy and stiff peaks form.
  4. Spoon meringue onto the parchment circle, creating swirls or peaks.
  5. Bake for about 1 hour 15 minutes until dry outside but slightly soft in the center. Turn off oven and let cool inside.
  6. Whip heavy cream with powdered sugar until soft peaks form.
  7. Once cooled, transfer meringue to a platter, spread with whipped cream, and top generously with fresh berries.
