Scale
- 24 ladyfingers
- 1 cup mascarpone cheese
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
- 1 cup brewed espresso or strong coffee (cooled)
- 1/2 cup granulated sugar
- 2 tbsp unsweetened cocoa powder
- 1 tsp pure vanilla extract
Instructions
- Brew a strong cup of espresso and let it cool completely.
- In a bowl, combine mascarpone cheese, sugar, and vanilla extract until smooth.
- Briefly dip each ladyfinger into the cooled coffee mixture—just enough to soften them without becoming soggy.
- Layer soaked ladyfingers in a dish, then spread half of the mascarpone mixture over them and top with half of the fresh berries.
- Repeat the process with another layer of soaked ladyfingers followed by the remaining mascarpone mixture and more berries on top.
- Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld together.
