  • 24 ladyfingers
  • 1 cup mascarpone cheese
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • 1 cup brewed espresso or strong coffee (cooled)
  • 1/2 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract

Instructions

  1. Brew a strong cup of espresso and let it cool completely.
  2. In a bowl, combine mascarpone cheese, sugar, and vanilla extract until smooth.
  3. Briefly dip each ladyfinger into the cooled coffee mixture—just enough to soften them without becoming soggy.
  4. Layer soaked ladyfingers in a dish, then spread half of the mascarpone mixture over them and top with half of the fresh berries.
  5. Repeat the process with another layer of soaked ladyfingers followed by the remaining mascarpone mixture and more berries on top.
  6. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld together.
