- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 8 oz penne or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil (plus more for drizzling)
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat and cook chicken until golden brown (6-7 minutes per side). Remove from pan and set aside.
- In the same pan, sauté minced garlic until fragrant (about 30 seconds), then add halved cherry tomatoes. Cook until softened (3-4 minutes).
- While tomatoes are cooking, boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve some cooking water before draining.
- Toss cooked pasta with sautéed garlic and tomatoes in the pan along with chopped basil and sliced chicken. Mix thoroughly.
- Drizzle with additional olive oil if desired and top with freshly grated Parmesan before serving.
