  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 8 oz penne or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 2 tbsp extra virgin olive oil (plus more for drizzling)
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat and cook chicken until golden brown (6-7 minutes per side). Remove from pan and set aside.
  2. In the same pan, sauté minced garlic until fragrant (about 30 seconds), then add halved cherry tomatoes. Cook until softened (3-4 minutes).
  3. While tomatoes are cooking, boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve some cooking water before draining.
  4. Toss cooked pasta with sautéed garlic and tomatoes in the pan along with chopped basil and sliced chicken. Mix thoroughly.
  5. Drizzle with additional olive oil if desired and top with freshly grated Parmesan before serving.
