  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese

  • 3 tablespoons all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch cauliflower florets in boiling salted water for about 5 minutes until slightly tender; drain and set aside.
  3. In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking until golden brown.
  4. Gradually whisk in heavy cream until smooth; cook until thickened.
  5. Remove from heat and stir in cheddar and Gruyère cheeses until melted. Add garlic powder, salt, and pepper to taste.
  6. In a greased baking dish, layer the cauliflower and pour the cheese sauce evenly over it.
  7. Top with panko breadcrumbs and bake for 25-30 minutes or until bubbly and golden brown.
