  • 3 cups cooked turkey, shredded
  • 1 cup orzo pasta
  • 1 cup bell peppers, chopped
  • 1 cup peas (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 1.5 cups shredded sharp cheddar cheese
  • 1 tsp dried thyme
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté chopped onions until translucent (about 5 minutes).
  3. In a large bowl, combine shredded turkey, orzo pasta, bell peppers, peas, corn, cream of mushroom soup, chicken broth, thyme, and half the cheese. Mix thoroughly.
  4. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  5. Top with remaining cheddar cheese and bake uncovered for 30-35 minutes until bubbly and golden brown.
  6. Let it rest for 10 minutes before serving; garnish with fresh parsley if desired.
