- 2 lbs starchy potatoes (Russet or Yukon Gold), peeled and thinly sliced
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1 cup shredded sharp cheddar cheese
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh thyme, chopped
- 3 cloves garlic, minced
- 2 tbsp unsalted butter (for greasing)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Peel and thinly slice the potatoes using a mandoline or knife.
- In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and half of the herbs.
- In a greased baking dish, layer half of the sliced potatoes; pour half of the cream mixture over them, followed by half of the cheeses.
- Repeat layers with remaining potatoes, cream mixture, and cheese. Top with remaining herbs.
- Cover with foil and bake for 45 minutes. Remove foil for the last 15 minutes to brown the top.
